Duties and Responsibility
ï‚· Implementation of a correct food production schedule for each department and
for each chef to maximize effectiveness and efficiency of employees ' kitchen
schedule'.
ï‚· Control each department/section for order placement for the next day
consumption based on their par stock level.
ï‚· Ensure proper receiving, storage, and rotation of products to comply with the
company standards.
ï‚· Manages all kitchen operations and commissary and ensures compliance with all
standards of best practices.
ï‚· Be Involved directly to all food supplier and purchasing manager for par stock
label in the warehouse and decide on quality before supplying in the outlets.
ï‚· Review employees' working schedule on required operation needed.
ï‚· Ensure that manning levels are correct and are not exceeded without
permission.
ï‚· To hold a weekly meeting with all branch head chef’s to ensure the smooth
running in all the kitchen’s.
ï‚· Establish portion sizes, test and file new recipes for an updated on the menu
book.
